Chocolate Ganache Cake

We just celebrated Hubby’s birthday over the weekend (actually we celebrated from Friday through last night with a variety of friend and family gatherings…), and besides his love for carrot cake, he always asks for one thing: chocolate, chocolate and more chocolate. A man after my own heart.

So that’s exactly what I created for him. A light chocolate cake filled with a rich chocolate ganache frosting and mini chocolate chips, coated in more decadent chocolate ganache frosting, packed in chocolate sprinkles, then dusted with cocoa powder. Believe it or not, as indulgent as it was, the cake wasn’t cloying. It had just the right balance of texture and sweetness.

Pretty perfect if you ask me. Just like Hubby.

Ingredients:

Chocolate cake recipe, doubled

2 cups semi-sweet chocolate chips

1 1/3 cups heavy cream

1/2 cup mini chocolate chips

About 2 cups chocolate sprinkles

About 1/4 cup cocoa powder

Instructions:

Prepare cake according to directions. (Remember to double it!)

Evenly coat two round baking pans with butter.

Distribute batter into each pan, and bake accordingly.

While cake is baking, place chocolate chips in a heat safe bowl.

Warm cream in a saucepan until it comes just to a boil.

Immediately pour hot cream over chocolate chips.

Stir until smooth.

For pourable ganache, you would stop here. To make our frosting, cover the bowl and refrigerate a little over an hour, stirring often.

It will change to a pudding-like consistency, and eventually become thick and spreadable.

If you leave it for longer than this, you can roll the chocolate into truffles and dip them in cocoa powder!

Using a serrated knife, even out the tops of each cake by carefully slicing a thin layer across to level each round.

Glob about half the frosting on top of one tier.

Spread evenly.

Top with mini chocolate chips.

Carefully stack the other layer on top.

Frost the sides and top.

Transfer cake to your serving plate and place over a baking pan to catch the mess. Pour sprinkles into a bowl, then using the palm of your (clean) hand, push sprinkles onto the sides of the cake.

Sift cocoa powder over top.
