Healthy (Eggless) Raw Chocolate Chip Cookie Dough

I have been on a major chocolate chip cookie kick. The one thing I miss every time I bake a batch? Eating the raw dough. There is something so bad-ass about licking the spatula and just-so-happening to leave a full cookie’s worth in the bowl so you can slowly scrape and indulge in the privacy of your kitchen. No judgement, no rules. You know you shouldn’t because salmonella is less than glamorous, blah, blah, blah, but you do it anyway and you always seem to survive.

That’s SO Jenn’s Healthy Farro ‘Arancini’ Bake

I don’t know about you, but I love a good arancini (Italian rice ball). Rich, cheesy, deep fried…what’s not love? Well, for starters it’s not exactly considered a health food. Therefore, my mission was to recreate my own version that would satisfy both our tastebuds and waistlines. (Okay, okay, I don’t currently have a waistline, but I hear it eventually comes back after the baby arrives.)

Farro came to mind as the ideal starch component, full of protein for an added benefit.ย Savory marinara, creamy nonfat ricotta, a bit of nutty parmesan, green peas and a light coating of panko breadcrumbs bake together forming a true tribute to the full-fat, high calorie alternative.
